Winter Warming Porridge

Baby it’s cold outside!! How about a warming bowl of porridge for breakfast? “Porridge is boring…” I hear you say. Not at our place. Topped with berries, nut butter and your choice of crunchies, this beauty is not only scrumptious but also super nourishing.


Everything Porridge Bowl
Serves 2


For the porridge:
1 cup rolled oats
2 cups of milk (your choice of animal or plant-based milk)


Toppings (as pictured):
½ cup blueberries
½ cup strawberries (cut into bite-size pieces) 
2 heaped teaspoons of nut butter (see notes)
2 teaspoons maple syrup (see notes)
1 teaspoon chia seeds (see notes) 

Method:
Place your oats and milk into a pot and pop it on the stove on high heat.  Bring to the almost boil (make sure you keep an eye on it and give it a stir every minute or so to prevent bubbling over and/or sticking to the pot), then turn down the heat to a simmer. 
Your porridge is ready when the oats have softened, absorbed some of the liquid, and you have a thickened, creamy consistency.  This normally takes around 10 minutes.  
Divide the porridge between two bowls then top with the nut butter, berries, maple syrup, and finally a sprinkle of seeds. 

Notes:

  • My favourite type of nut butter is cashew, but you can use whichever nut butter you fancy.  I make my own cashew butter by placing 2 cups of roasted and salted cashews into a blender or food processor and blitzing until I get a super smooth, runny consistency. This process also works with roasted almonds so if you’ve never tried making your own nut butter you should definitely give it a go. It’s a lot cheaper that buying a jar from the supermarket and a great way to get a dose of good fats and plant-based protein. Store your homemade nut butter in a clean glass jar in the fridge.  Lasts for a good month or two. 
  • Maple syrup – to keep this meal nutritious use the real deal here, not maple “flavoured” syrup. It might cost a little more but it’s infinitely better for you.  Alternatives are honey or agave syrup. 
  • I love chia seeds on my porridge. They’re crunchy and poppy and highly nutritious.  If you’re not a fan, then sunflower seed or pepitas (pumpkins seeds) also work really well.
